best way to polish metal?

If the metal part is quite large or big and especially if it's stainless steel, I use a sander and start with 320 grit sand paper and go through 400, 600, 1000, 1500 and 2000 grit sand paper.

For stainless do you use a belt sander, so it only sands in 2 directions?

For other metals, do you use a orbital sander and do you "wet sand" at a specific grit?

I never use a belt sander, I would'nt dare try that.......
I use an orbital sander and dry sand with the 320 grit and 400 grit, then starting at 600 grit I "wet sand" all through the different grits up to 2000 grit, if you wish , you can finish with a polishing paste but it does'nt really make a difference on stainless steel.

Wow, I thought you could only sand stainless in 2 directions.
