That F14 came from a friend of Brewmanager who I believe bought it from Kevin, then I bought it because it had a demon that needed to be exorcised, then it went to Drano and then to Adam.

They install the same way a ROM does. Power off, remove RAM from socket, install NVRAM in socket making sure pin 1 is oriented the right way, power up and setup all your preferences (you will lose all your game settings like free-play and high scores etc) and then remove the batteries. That's...
Transistors can fail if operated for too long of a period under certain conditions, so it is possible the scenario you listed caused it. But they have been known to just fail for no reason as well. Same with diodes, they can and do fail and when that happens it can take out the associated...
With the way Stern is designed it will be VERY difficult to near impossible to test that FET with the PCB still installed in the game. The associated diode may or may not be bad, but where you're going to have to replace the FET you should replace the diode at the same time. It's just cheap...
I personally think the price for that lot is high as well, not only because it's just GTB Sys3 games but because you're being asked to buy in bulk. Currently you'd be paying just over $17xx USD for each title, which by today's standards isn't horrible for a DMD but you have to come back to the...
I especially liked the line in the ad " Absolutely no bargaining. $2900 is an insane price. Just look around." Insane sums it up pretty damn good, because it's INSANELY HIGH!
Thing is... these will sell eventually. (although I highly doubt at that price)

Where the game works with the wire pulled out of the connector, the issue will be out in the game and not on the PCB so changing the IC's wouldn't fix the problem. (if it was a PCB issue the problem would remain even with the wire pulled)
GI going out at random? Sounds connector related to me.
